Introduction
1.1 Background of the Study
Cassava is one of the most widely cultivated crops in Africa, with over 50 million metric tons produced annually (FAO, 2020). It is a staple crop for millions of people in sub-Saharan Africa especially Cameroon, providing a source of food, income, and employment (Gockowski et al., 2018). In Cameroon, cassava is a major crop, with the majority of production taking place in the southern regions, including the South West Region (MINADER, 2019).
The Manyu, Meme, and Fontem Divisions are among the highest cassava-producing areas in the South West Region of Cameroon with the crop being grown by both small-scale and large-scale farmers (Gockowski et al., 2018). Cassava is a versatile crop that can be processed into a variety of products, including garri, cassava flour, cassava starch, and fufu (a staple food in many African countries) (IITA, 2019).
Water fufu, a popular dish in Cameroon, is made from fermented cassava tubers and is a major source of income for many small-scale farmers and processors (Kouebou et al., 2017). However, the quality of water fufu in the south West Region especially Tiko municipality is often affected by several factors, including water quality, storage containers, condition of processing equipment, training of processors, and environmental factors (Nguyen et al., 2019).
The production of water FUFU involved several stages peeling washing fermentation drying and storage and Many parameters can influence the fluctuations of water fufu quality such as the quantity of Raw materials post-harvest processing method resources use such as the quality of water fermentation condition ( time temperature) the type of containers use for the fermentation proceed even the storage Conditions
Also human factors like the experience and the knowledge about the process method.
Therefore, it is essential to investigate the factors affecting the quality of water fufu in the South West Region and to identify strategies for improving the production and processing of cassava in the region.
1.2 Statement of the Problem
The quality of water fufu in Tiko Municipality, South West Region of Cameroon, is a pressing concern. The inconsistency in quality, which varies from one production to another, season to season, person to person, and location to location, raises concerns about the safety and reliability of water fufu for consumption.
This fluctuation in quality can be attributed to various factors, including human, processing, and marketing-related issues. Understanding these factors is crucial to addressing the problem and ensuring the consistent production of high-quality water fufu would be my focus as the above mention factors are problems because.
Lack of proper training and education on water fufu production and safety protocols Poor handling and hygiene practices among producers Inadequate quality control measures Insufficient knowledge about water fufu safety and quality among producers, Inadequate or poorly maintained processing and storage facilities Lack of proper equipment and tools for water fufu production Inadequate cleaning and sanitation practices Insufficient storage capacity leading to contamination or spoilage Inefficient marketing strategies leading to poor sales and revenue Limited access to markets and distribution channels Lack of proper packaging and labeling leading to contamination or spoilage Insufficient consumer education on water fufu safety and quality.
So it is Essential I go into the field to gather information on the potential problem face by processors traders of water fufu spefically in Tiko municipality.
1.3 Research Objective
Main Research Objective:
To determine the factors affecting the fluctuation of water fufu quality in Tiko Municipality, South West Region of Cameroon.
Specific Objectives:
- To investigate the human factors that determines the quality and safety of water fufu in Tiko Municipality, South West Region of Cameroon.
- To examine the processing and storage facilities used in water fufu production in Tiko Municipality, South West Region of Cameroon.
- To identify the marketing strategies and channels used in the sale of water fufu in Tiko Municipality, South West Region of Cameroon.
1.4 Research Questions
Main Research Question:
What are the factors affecting the fluctuation of water fufu quality in Tiko Municipality, South West Region of Cameroon?
Specific Research Questions:
- What human factors influence the quality and safety of water fufu in Tiko Municipality, South West Region of Cameroon?
- How do processing and storage facilities affect the quality of water fufu in Tiko Municipality, South West Region of Cameroon?
- What marketing strategies and channels are used in the sale of water fufu in Tiko Municipality, South West Region of Cameroon?
1.5 Hypotheses:
H1: There is a significant relationship between human factors and the quality of water fufu in Tiko Municipality, South West Region of Cameroon.
Ho: There is no significant relationship between human factors and the quality of water fufu in Tiko Municipality, South West Region of Cameroon.
H2: Processing and storage facilities have a significant impact on the quality of water fufu in Tiko Municipality, South West Region of Cameroon.
Ho: Processing and storage facilities do not have a significant impact on the quality of water fufu in Tiko Municipality, South West Region of Cameroon.
H3: Marketing strategies and channels used in the sale of water fufu affect the quality of water fufu in Tiko Municipality, South West Region of Cameroon.
Ho: Marketing strategies and channels used in the sale of water fufu do not affect the quality of water fufu in Tiko Municipality, South West Region of Cameroon.
H4: There is a significant difference in the quality of water fufu produced in different locations within Tiko Municipality, South West Region of Cameroon.
Ho: There is no significant difference in the quality of water fufu produced in different locations within Tiko Municipality, South West Region of Cameroon.
